Ofelia’s started as a humble food stand, but as word spread about its incredible flavors, it grew in popularity and earned the love of the community.
What began as a small family business has morphed itself into a beloved local staple in Prior Lake. Ofelia’s Fresh Mexican Food has become known not only for its authentic cuisine, but also for the dedication, hard work, and family effort.
Ofelia’s Food Truck operates in Prior Lake in the Tractor Supply Company parking lot Monday through Saturday. They park in New Prague at Napa Auto Parts on Fridays.
This Food Truck serves traditional Mexican food with fresh ingredients and homemade recipes. From tacos to burritos, Ofelia’s has built a loyal clientele that grows each season.
Eric and Ofelia Warner, the owners of Ofelia’s Fresh Mexican Food, explained where the idea for the business came from, elaborating on how Ofelia aspired to share her love of cooking and her desire to share her culture within the community.
The Warners outlined how “It was first out of necessity but later became our steady source of income with a loyal customer base,” Eric said.
“I’ve always enjoyed cooking and baking for my family,” Ofelia shared. “Opening up this food truck enabled me to share the food I grew up with and build professional relationships with others.”
Operating the food truck is a family effort. Ofelia Warner focuses on preparing food and maintaining quality. Husband Eric manages daily operations, customer service, setup, and logistics.
“It does take a lot of dedication and hard work, but it’s rewarding,” Eric said. “Seeing everyone support us and being warmly embraced by the community makes everything worth it.”
Building a successful food truck business doesn’t happen overnight. The family devoted time to plan and learn how to manage a small business. From early mornings to long days serving customers, the work required the entire family — including all three of their children.
At 21, Eric the oldest of the three, is currently a junior attending Carleton college while majoring in Pre-Med. Helen, 18, is a freshman at St.Olaf college also majoring in Pre-Med. The youngest, Beth, is a junior at Prior Lake High School hoping to attend the University of St.Thomas.
Customers often recognize and acknowledge the welcoming atmosphere of the business. Many feel a personal connection when they see the same faces helping them every time they visit. This sense of familiarity has helped Ofelia’s Fresh Mexican Food stand out among other local food businesses.
Ofelia believes that authenticity and dedication is what keeps people coming back.
“We use recipes that share love and that mean something to us,” she said. “We want people to feel the love and care we put into our food.”
While Eric devotes more time focusing on the business side, he also sees how the food truck positively impacts the community.
“It’s an honor to be able to serve and contribute to the community of Prior Lake,” Eric said. “The recognition and appreciation means a great deal to all of us.”
The food truck has become a learning experience for Eric and Ofelia, as they have gained so much knowledge and responsibility from having the hands-on experience of handling a business.
Despite the obstacles faced such as weather, long hours, and busy rushes, the family remains highly motivated. What started as a small tent at Lydia’s farmers market has turned into something bigger. It’s not just a place to eat, it reflects culture and gives others a sense of home.
As the stand continues to grow, the Warners hope to keep serving the community with the same care and dedication that first started it all.
